- Blend. Blend together everything but the beef, water, and cornstarch.
- Place. Place beef cubes into your Instant Pot and cover with the blended veggies.
- Add Water. Use the 3/4 cup water to wash out the blender and pour that into your pot.
- Pressure Cook. Cook at High Pressure for 20 minutes, and release pressure quickly
- Boil. Turn your pot on to Sauté and get the stew on a full boil. If you have a lot of liquid, boil for 5-10 minutes to reduce the liquid.
- Thicken. Make a cornstarch slurry (mix the corn flour with some water), and pour it into the boiling stew and stir until it thickens.

- Place beef cubes into your slow cooker and cover with the blended veggies.

Hi! Thank you for sharing the recipe with us. I made it for the first time and it went well. However, I used chili powder and a 14 oz can of diced tomatoes instead of the ancho chili powder and 2 tomatoes. There was plenty of delicious sauce as a result. No complaints here! We made tacos with it and also ate it as an entree with some rice. Definitely will make it again.

I didn’t used a blender for the veggies (because I don’t like the smell it lefts), instead I used a manual food processor but it worked perfectly and my husband and I loved our carne guisada.
Oh, I added like a tablespoon or so of tomato paste to make it look more red.

I served it with. Spanish rice and refried pinto beans. It got 2 thumbs up in my home. This will definitely be in our rotation. I only did one thing different and that was using Chile powder instead of Due to having acid reflux. So give it a try I can promise you won’t regret it !
