I took a lot of shortcuts while making this Mansaf--because that's just how I roll. But it tastes authentic despite all that. I love making traditional dishes with traditional flavors easier and faster with my Instant Pot.
What Is Mansaf?
Mansaf is often referred to as Jordan's national food and is prevalent across Arab countries. It is a lamb and yogurt dish with a delicious clear broth that is served often over rice or bulgur.
What Does Mansaf Taste Like?
Mansaf is a dish that has a very distinct flavor that is incredibly easy to love. It has a lovely combination of salty and fermented flavors.
Once you get past the initial prevalent flavors of the dish you will be pleasantly surprised by the fragrant notes of coriander, cardamom, and clove. Finish off each mouthful with the nuttiness of almonds and pine nuts and you truly have the perfect bite.
Ingredients You'll Need
I do have to admit this isn't one of the most simple assortments of ingredients I've ever come up with for a recipe, but the flavor is absolutely stellar.
Spice Mix
- Cumin seeds
- Coriander Seeds
- Whole Black Peppercorns
- Kosher Salt
- Cinnamon
- Whole Cloves
- Ground Nutmeg
- Cardamom Seeds
Yogurt Sauce
- Greek Yogurt
- Cornstarch
Lamb
- Ghee
- Sliced Onions
- Leg of Lamb- This should be cut into 2-inch chunks.
Garnish
Between the ghee, the onions, and the yogurt, this Instant Pot Jordanian Mansaf is FULL of flavor and you're going to love it.
How To Make Mansaf
While this is far from a pour and cook recipe, if you follow the steps below in the order that they are listed, it is an easy recipe to recreate in an extremely short amount of time.
Spice Mix
- Using a clean coffee grinder, grind together the spices you will use to make the mansaf.
Yogurt Sauce
- Place yogurt, water, cornstarch, and the spice mix you just made into a blender container and whirl for about 1 minute. This thorough blending is what will keep the yogurt from curdling when cooked.
Mansaf
- Turn your Instant Pot on Sauté and when it is hot, add the ghee. Pour in the sliced onions and the chunks of lamb. Cook for 2-3 minutes, just long enough to coat the lamb and onions with the ghee.
- Pour in the spiced yogurt sauce and mix well so the ghee is incorporated into the yogurt sauce.
- Close the lid and set your Instant Pot to cook on the SOUP setting for 10 minutes. When it is done cooking, allow the pot to sit undisturbed for 10 minutes and then release all remaining pressure.
- To serve, place the cooked rice on a platter. Arrange the meat over the rice along with some of the sauce. Reserve any extra sauce to pass around the table. Garnish with the toasted nuts and enjoy!
This dish will use the soup button on your Instant Pot to make the Instant Pot Jordanian Mansaf turn out just like it's supposed to. You will need to saute the ghee, onions, and lamb in the pot before setting it to pressure cook to get that nice browning on the meat.
Tips And Tricks
- Cut it small. It is very important that you cut the lamb into 2" pieces as I suggest in the recipe. This will allow your lamb to cook quickly, and become fall-apart tender.
- Save the sauce. It's clear that spiced lamb meat is supposed to be the star of this recipe. Don't let that trick you into leaving the sauce in the pan when you serve your meal. Serve the sauce in the same pan as the meat, or reserve it in a separate bowl, but make sure it has a place at your table.
- Use the correct pressure setting. The soup function brings the contents of the broth to the correct temperature without the broth coming to a hard boil. This prevents the broth from becoming cloudy during the cooking process.
What To Serve With Jordanian Mansaf
This Mansaf recipe creates an absolutely delectable broth that you won't want to miss out on. While you can simply enjoy sipping it with a spoon, you can also use a delicious vessel to help soak up the lovely flavor.

And if you're trying to keep the carb count of this meal low, you can enjoy it with Greek yogurt, arugula, or even riced cauliflower.
How Long Does It Last?
Mansaf is typically a dish that is served as a celebratory meal, so if you're serving a crowd, I wouldn't worry about having anything left over. While the flavor combinations may be new to many people, they're very loveable.
If you are simply a Mansaf lover and want to make it for a weeknight meal, you can store any leftovers in an airtight container in the refrigerator for up to 4 days.

I have never done this before-do I put all the spices mentioned, whole, etc. in the grinder, even the cinnamon stick, etc? I have a coffee grinder and an Insta Pot I can borrow from my daughter. Thanks
