This Roasted Ratatouille Recipe gives you all the flavor of a traditional ratatouille without all of the work! Enjoy a deliciously gluten-free and vegan side dish with minimal effort!
What Makes This Air Fryer Ratatouille So Good
I love ratatouille, but I don’t love the laborious arranging of it in concentric circles because I really don’t have that kind of patience—nor the attention span if truth be told. I also find the veggies to be a little less crisp in that process.
So I decided to use the ingredients of ratatouille but roast them to get a more savory, slightly crisp dish. The result was this Air Fryer Roasted Ratatouille Recipe, and let me tell you, you'll never want to make ratatouille the traditional way ever again.
If you've never had ratatouille, let me tell you, it's got to be one of the best vegetable side dishes out there (if not the best). This seemingly simple Roasted Ratatouille Recipe is actually bursting with complex flavors.

Hello! I’m about to get my air fryer and am excited to try esp vegetarian and vegan recipes. Since I’m a newbie fryer, my question is this- I want to make this as a main dish because we love ratatouille, so if I increase the vegetables 3-fold, will they still crisp up? Do I just shake them a few times and perhaps adjust the timing?

I find it faster to cook in batches and results are also more even. I would split that into two batches and see if that works. As long as the food isn’t piled on top of each other, it works as the veggies shrink somewhat upon cooking.

Hi, Urvashi! I have an air fryer and I confess that I have used it only once in the last year. This is a great recipe to put my fryer to use.
