If you’re looking for an easy side dish you can make in your air fryer, you need to try these Rosemary Roasted Potatoes! They take minimal effort, but are flavorful and delicious. The air fryer makes them crispy on the outside and soft in the middle in a fraction of the time you could do that in the oven.
If you have fifteen minutes, some potatoes, and a handful of spices, you can make these Rosemary Roasted Potatoes in your air fryer. They’re an easy side dish, would be great to bring to a potluck, and are a great use of those extra potatoes you have in your pantry.

Potatoes are amazing in the air fryer. I’ve cooked potatoes often in them (and not just french fries!) and I’m always happy with how they turn out.
Tossing them or spraying them in a thin coat of oil before you cook this ensures they are crispy and perfect when they come out. It’s far less oil than actually frying them, and you won’t miss it.
These would make a great dish to bring with you to grandma’s house, to church for a church dinner, or to a get-together with friends. They’re pretty versatile and go with a large variety of foods. I love the fresh taste the rosemary gives them and these always disappear quickly each time I make them.
They also freeze very well I’ve found. You just need to defrost them gently (as in, don’t be impatient and give it 100% high treatment in the microwave like me).
One nice thing about air fryers is that the only ones they make are electric. So I don’t have to spend hours debating between gas vs. electric for cooking.
What I would do is make some cilantro pesto chicken legs and these Rosemary roasted potatoes, and call it a wonderful dinner that took almost no time to make. Make the chicken first. While it’s cooking, prep the potatoes. Once the chicken is done, cover it with foil and let it rest while you cook the potatoes.

In a large bowl, add potatoes, oil, rosemary, garlic, salt, and pepper. Mix well.
Place the seasoned potatoes in the air fryer basket and cook at 400F for 15 minutes. Check to ensure the potatoes are cooked through.
Sprinkle lemon juice and chopped parsley onto the potatoes and serve.
