If it's one thing I love, it's bacon and wrapping everything in bacon. Bacon is one of those ingredients that can be added to a dish and it always seems to make it better. Of course, not all dishes, but pretty close.
This Bacon Wrapped Stuffed Chicken recipe is no different. They quickly moved to the next level when I decided to wrap them in bacon. They're now one of my favorite dinners to make.
The crispy bacon on these Bacon Wrapped Stuffed Chicken Breasts pairs well with the soft, juicy chicken. The flavor combination, all the way around with this dish, is perfection.
Did I mention this dish is keto-friendly? I know, it surprises me when dishes that are this good can be included on a diet. However, keto is all about good fats and a level portion of protein for the day. Keto is set up to burn fat, not carbohydrates, which is why it's so effective at removing inches and weight.

Bacon pairs so well with this chicken dish that it makes me love it even more. I have to say, I make a lot of dishes that include wrapping the dish in bacon.
However, I would have to say that this Bacon Wrapped Stuffed Chicken recipe is one of my favorites and takes very little effort to throw together.
Can you make Chicken Breast in the Air Fryer?
So it's not the easiest thing to get right in an air fryer. That's because chicken breast is lean to start with, and to get a good result in the air fryer, you have to have a little fat on or in the food.
You can very easily overcook chicken breast in the airfryer. I find that two things help with keeping it from overdrying
- Leave the skin on OR
- Wrap in bacon
- Do not overcook it! A Meat thermometer will be your friend.
Chicken breast in the air fryer is not that easy to make without making dry chicken. But in this recipe, the bacon bastes that chicken breast so you get a much better result.
Definitely one of those fancy dishes that aren't really fancy as far as time is concerned. I have no doubt you'll enjoy it as much as I do.
How To Make Bacon Wrapped Stuffed Chicken
- Make the filling: In a small bowl, mix together spinach, cream cheese, Parmesan cheese, jalapenos, salt and pepper.
- Stuff the chicken breasts: Place the butterflied chicken breasts on a flat surface. Spread the cream cheese mixture evenly across the two breasts.
- Roll up chicken: Starting with the narrow end, roll up the chicken breast, ensuring the filling stays inside.
- Season the chicken: Dust each of the breasts with Cajun seasoning, patting it in to ensure it sticks to the chicken breast.
- Bacon wrap! : Wrap each chicken breast in 3 slices of bacon each. Place the wrapped chicken breasts in the air fryer basket.
- Air Fry: Set fryer to 350°F for 30 minutes. Use a meat thermometer to ensure the chicken has reached an internal temperature of 165F.
Tips And Tricks For Making Bacon Wrapped Stuffed Chicken
- Pound the breast. The trick to getting great Bacon Wrapped Stuffed Chicken is to pound the chicken breasts so that they cook quickly. This tenderizes the chicken, which makes it less tough and easier to cook.
- Use thighs: You can also use de-boned chicken thighs for this recipe.
- Lazy variation: Sometimes when I'm feeling terribly lazy, I've been known to just stuff these with flavored cream cheese and thawed spinach and call it a day. Low carb deliciousness with very little work!
- Toothpick the bacon: If you're having trouble with your bacon staying in place, you can try using a toothpick to hold it in place. Once cooked, the toothpick is easily removable and the bacon shouldn't move after that.
- Freeze the bacon a little: Usually, if your bacon isn't slightly frozen, it should stick to itself pretty well and hold in place well enough to be used without a toothpick. However, things happen and toothpicks may be necessary.
How To Butterfly A Chicken Breast?
Now before we get into how to butterfly a chicken breast for this Bacon Wrapped Stuffed Chicken recipe, let's cover exactly what that means and why it's beneficial.
Butterflying is where you split a chicken breast (or other meat) in half horizontally. Sometimes you cut the piece of chicken entirely in half, and other times you simply cut most of the way through and then open it up like a book.
This technique is commonly used to make the chicken thinner, resulting in a more uniform thickness that allows the meat to cook more evenly.
This is also ideal for stuffing, as it allows you to easily spread the filling across the flat surface and then roll it up for cooking.
Now here is how it's done:
- Place the chicken on a flat surface like a cutting board.
- Take a knife, place the blade horizontally and cut into the chicken breast until it is almost entirely through the chicken.
- Simply open the chicken up like a book.
- Pound the chicken flat with a meat tenderizer or other large, blunt object.
