- Combine. In the slow cooker, combine the chicken thighs and the blended ingredients.

- Shred And Serve. Remove the chicken thighs to a cutting board. Using two forks, shred the chicken. Add it back to the slow cooker. Stir in lime juice and serve.
Is Chipotle Chicken Spicy?
This Slow Cooker Chipotle Chicken Recipe does have some spice to it, but it's not burn-your-tastebuds-off spicy. It has a nice heat to it without being too intense.
If you're afraid that it will be too spicy for your liking, try serving it with some tortillas or over some brown rice to help subdue some of the heat.
What Is Chipotle Chicken Made Of?
This Slow Cooker Chipotle Chicken Recipe consists of mainly the chicken and the chipotle adobo sauce, which are the main ingredients you'd see in the chicken you get from the restaurant Chipotle.
Add in some delightful seasonings, garlic, apple cider vinegar, and lime juice and you've got one delectable high protein copycat chipotle chicken recipe you'll absolutely love!
Tips And Tricks For Making This Chipotle Barbacoa
- Doubling. I wrote this for 1 pound of meat because many of us can’t finish several pounds of meat at once. But you can always double or triple the recipe. Just leave the water to 1 cup if you double the recipe.
- Freezing. You can freeze the leftovers along with some of the cooking liquid to keep it moist when defrosting.
- Pressure Cooker. To make this in the pressure cooker, reduce water to 1/4 cup. Cook at high pressure for 10 minutes, and allow the pot to rest undisturbed for 10 minutes. Then, release all remaining pressure.
Serving Suggestions for Keto Barbacoa
- Salad: Use the cooking liquid as a dressing. You may choose to use romaine lettuce, sour cream, salsa, guacamole, chopped red onions, and cilantro.
- Tacos: Wrap in corn or four tortillas with chopped red onions and cilantro.
- Over Rice: Cook brown rice pot in pot in the same pot as the meat cooks.
- Cauliflower Rice: Keep things keto-friendly by serving this with some cauliflower rice.

I used 1 chipotle chili in adobo, and 2lb of chicken breast tenderloins. The rest of the recipe was left unchanged. It was absolutely amazing, and not too hot for the rest of the family - though I would have preferred an extra chili or 2 in the slow cooker.
Valerie
fantastic, easy; delicious recipe -doubles easily. I freeze leftover chipotle peppers and sauce from the can -since 1 can is usually too much to use all at once for me.
Nora
Would chicken breast work ok? We don’t eat dark meat.
AshleyThompson
Yes! The chicken breast will work just fine. I prefer dark meat so I use it a lot in my recipes. It is interchangeable for breast meat in all of them 🙂
Jenny
I'm anxious to try this. But I do have a question! You say 1 chipotle chile in adobo... So take out one chili from the sauce and use it? Not any of the actual adobo sauce?
Christy Vande Waa
Same question! Do I dump the whole can in or just use one chili?!!
AshleyThompson
Just one! You can add them one at a time depending on your heat tolerance, but a whole can will be far too overpowering.
