What Makes This Keto Buffalo Chicken Casserole So Fantastic
- Low Carb. Only 4 carbs per serving.
- Quick. Made in less than 30 minutes (it only takes me 15).
- Easy. Mis the ingredients together and bake.
- Gluten Free. A great appetizer or dip for anyone with a gluten allergy.
- A Crowd Favorite. Who doesn't love Buffalo Chicken Dip? Make it for any movie night, to watch the big game, or to smear on a low carb tortilla or flatout wrap.
This Keto Buffalo Chicken Dip has all the various components of buffalo wings--except in one neat, non-messy but equally delicious package. So really, it's #ruthlessefficiency at it's best!
I don't know if you've noticed this about me yet, but I tend to like my food spicy. I have a tendency to add a little extra spice to most everything I eat.
In my opinion, there are few things as satisfying at the end of a long day as something hot and spicy.
But that's just it. Who really wants to cook something after a long, tiring day? That's exactly why I love this Keto Buffalo Chicken Dip.
This dish has just the right amount of heat while still being a very simple and quick dish to make. You get that tangy spice of the wing sauce, the savory, protein-rich bite of the chicken and the delightful crisp of the chopped green onions in every bite, and it's oh-so-satisfying!
Of course, the fact that it's homemade means that YOU get to choose how spicy it is.
All of the heat in this dish comes from the buffalo sauce so either choose a less spicy version or add more of it.
But that's not the only reason I'm a huge fan of this Buffalo Chicken Casserole. Not only is it delicious, but it's keto-friendly. You won't find any cream of anything soup in this casserole.
Here's the thing though. All it is, is delicious. So if you eat low carb? Enjoy. If the rest of the family doesn't? Serve it with some chips.
Do you know what else I love about this Low Carb Casserole? It's a great way to use up a rotisserie chicken, or any cooked chicken you may have.
Few things make me happy as a delicious meal that's low carb and guilt-free.
Is Buffalo Sauce Ok On Keto?
Most buffalo sauces or hot sauces are vinegar-based and more focused on being spicy than sweet like other condiments. So, a majority of them are great for keto dishes.
However, not all buffalo sauces are created equal. Not all of them are ok to have while you're living a low carb lifestyle. Make sure you read the ingredients lists and the nutrition facts before you grab a bottle to add to this Keto Buffalo Chicken Dip.
Here are a few brands that are low carb friendly:
- Tabasco
- Frank's Red Hot
- Primal Kitchen Hot Sauce
- Truff (this has a slightly different flavor profile than traditional hot sauces, but would make a nice addition to this dip)
What Do you Put In Buffalo Chicken Casserole?
- Rotisserie Chicken
- Onion
- Cream
- Hot wing sauce
- Blue cheese, crumbled
- Cream Cheese
- pepper
- Chopped Green Scallions
Don't like blue cheese? That's totally fine. Just switch it out with a little mozzarella or omit it completely. It may change the macros just a tad, but it will still be delicious.

What To Serve With Buffalo Chicken Casserole?
You typically want to serve something that can help cut down on the heat of the dish.
Celery or most any other type of fresh vegetable is a great option, as well as starchy things, such as bread or potatoes.
The starches help create a barrier on your tongue to help cut down the heat of the dish, as well as absorbing some of the spicinesses at the same time.

This recipe is fabulous! I decided to serve the casserole over iceberg lettuce with blue cheese dressing on the side. It was a wonderful change and very easy to make.

REAL good. I did the chicken in instant pot and then air fryer. Then the salad in the oven. Oh my, it is marvelous. I didn't use the hot wing sauce because my wife doesn't like spicy (but I can tell you I used a lot in my own plate). Highly recommend

Very rich and very good. Easy to make. I couldn't find the hot wings sauce so I added sriracha sauce to some hot sauce and it worked well.
