Traditionally called Fasolakia, this recipe consists of green beans, onion, potatoes, and tomatoes tossed in olive oil, lemon oil, and a little bit of seasoning.
It's quick, easy, and wonderfully tasty all at the same time. Who could possibly ask for more in a veggie side dish?

How To Make Instant Pot Greek Green Beans
- Combine condiments, potatoes and tomatoes. Place the oil, onions, potatoes, tomatoes, sugar, salt, pepper and water in the Instant Pot and stir.
- Add the green beans and stir.
- Cook under pressure. Close the lid and press PRESSURE COOK and cook on HIGH PRESSURE for 4 minutes. Allow pressure to release naturally for 10 minutes and then release all remaining pressure.
- Season. Mix in lemon juice and parsley, and serve.

- 1 Onion, diced
- 2 cups Russet Potatoes, peeled and diced into 1 inch potatoes
- 1.5 cups Tomatoes, diced
- 1 teaspoon Sugar Or Other Sweetener Equivalent, optional
- 1 teaspoon Kosher Salt
- 1/2 teaspoon Ground Black Pepper
- 1/4 cup Water
- 4 cups green beans, frozen or fresh green beans trimmed and cut into 2-inch pieces
- 1/4 cup Chopped Parsley
- juice of one lemon
Instructions
- Place the oil, onions, potatoes, tomatoes, sugar, salt, pepper and water in the Instant Pot and stir.
- Add the green beans and stir.
- Close the lid and press PRESSURE COOK and cook on HIGH PRESSURE for 4 minutes. Allow pressure to release naturally for 10 minutes and then release all remaining pressure.
- Mix in lemon juice and parsley, and serve.

- To make this low carb just omit the potatotes, and substitute turnips instead.
