- Basmati Rice- You can use a variety of types of rice in this recipe, but I keep Basmati rice in my pantry and prefer its texture.
- Cilantro- Chopped cilantro adds freshness to each delicious bite.
- Lime Juice- For a bit of acidity to cut the fat from the ghee.
- Salt
- Ghee- Prevents the rice from sticking to the pan and itself while adding a delicious hint of nutty, earthy flavor.
How To Make Chipotle Cilantro Lime Rice
One of the things I love so much about using my Instant Pot to prepare any recipe is how quick and easy it makes things. You can prepare this dish in just a few easy-to-follow steps in a fraction of the time and effort of making it on the stovetop.
- Start by rinsing 1 cup of long-grain rice in a fine mesh strainer. Then, add the rice to the Instant Pot along with the water, ghee, and salt.
- Close the lid and set the Instant Pot to manual high pressure.
- Set the rice to cook for 10 minutes. Once the cooking time is complete, allow a natural pressure release for an additional 10 minutes. When the time is up, manually release all remaining pressure.
- Remove the Instant Pot lid and add in the diced cilantro. While you are carefully fluffing your rice, you will naturally incorporate the added fresh cilantro.
- Remove from the Instant Pot liner, squeeze fresh lime juice over the top, serve, and enjoy!
Variations
- Swap out the herbs. If you're one of the people with the genetic trait that makes cilantro taste like soap, you can still add a bite of freshness without using cilantro. Simply swap out parsley for the cilantro for an equally tasty bowl of rice.
- Use brown rice. Chipotle offers brown cilantro lime rice as an alternative to white rice. If you prefer the brown rice in your burrito bowl, you can make this at home too. Follow the same instructions as written below, but increase the cooking time to 22 minutes with a 10-minute natural pressure release.
- Make it in your rice cooker. If you have something else cooking in your Instant Pot, you can make this copycat Chipotle Cilantro Lime Rice in your rice cooker. All you need to do is make rice according to the instructions for your rice cooker with a touch of heat. Once it is done cooking, stir in some chopped cilantro and finish with lime.
