Do Stuffed Mushrooms Have Carbs?
Yes, keto stuffed mushrooms do still have carbs. Luckily, I modified this recipe to have as few carbs as possible while still giving all of your favorite flavors.
Can You Have Mushrooms On Keto?
Not only can you have mushrooms while living a low carb lifestyle, but they're also one of the most popular foods to eat while eating keto.
Portabella mushrooms only contain a little over 2 net carbs per serving while being extremely low in calories. Each Portabello mushroom only contains around 15 calories, depending on size.
How Do You Get Moisture Out Of Mushrooms Before Stuffing?
When cooking stuffed mushrooms, many people choose to partially dehydrate them before stuffing them. I've personally found that the texture difference in pre-roasting them before stuffing them isn't significant enough to warrant the extra step or time.
The moisture from the cream cheese and the spinach softens the mushroom caps a bit, so pre-roasting doesn't make a substantial difference in the bite.
Ingredients Needed
- Portobello Mushrooms- I prefer portobello when I'm stuffing mushrooms because they're larger and I feel like I get more "bang for my buck" with prep work.
- Baby Spinach- Is tender and cooks up quickly when stuffed inside of the mushrooms.
- Cream Cheese- Melts up deliciously creamy and pairs well with the meaty flavors of the portabello mushrooms.
- Mozzarella Cheese- Creates a bit of a "crust" on top of the mushroom caps when they are air fried to give the illusion of a breadcrumb topping while still keeping each bite low carb.
- Olive Oil Spray- This helps crisp the outside of the mushrooms to give a depth of texture in each bite.
- Garlic
- Salt
- Pepper
How To Make Air Fryer Stuffed Mushrooms
- Clean the mushrooms and carefully remove the stems from the mushroom caps.
- In a large bowl, mix together cream cheese, half of the mozzarella cheese, minced garlic, salt, pepper, and chopped spinach.
- Spoon the filling into the mushroom caps and spray the mushrooms lightly with olive oil.
- Place the mushrooms into the air fryer basket and air fry for 10 minutes.
- Two minutes before the cooking time is complete, add reserved mozzarella cheese and complete the cooking cycle.
- Carefully remove the stuffed mushrooms from the air fryer basket and serve.
Variations
- Make them meaty. If you want to increase the amount of protein per serving, you can add pre-cooked sausage to the cream cheese, mozzarella, and spinach mixture before air frying.
- Spice them up. Mix in a few tablespoons of diced green chilis for a slight kick of heat.
- Add some crunch. If you're not worried about carbs, you can top the stuffed mushrooms with a breadcrumb and parmesan cheese mixture. Add this to the top in the last few minutes of cooking to toast the topping to perfection.
How Long Do You Cook Frozen Stuffed Mushrooms In The Air Fryer?
If you are pressed for time or happen to just love the frozen stuffed mushrooms you can pick up at the local grocer, you can also cook these in your air fryer.
One of the biggest advantages of making anything in the air fryer is how quickly it cooks. To prepare frozen stuffed mushrooms in the air fryer, heat your air fryer to 375F and cook for 10 minutes.
What Do You Serve With Them?
Choosing what to serve with air fryer stuffed mushrooms completely depends on how you're choosing to enjoy them. If they're being eaten as an appetizer, you'll likely pair them with another appetizer for a party or tailgating. If you're having them for a low carb vegetarian dinner, you'll likely be looking for a fresh-flavored side dish.

How Long Do They Last?
Mushrooms are essentially a sponge, so they have a tendency to become very soft if exposed to any outside moisture. With the moisture the filling ingredients can excrete during the cooking process, these air fryer stuffed mushrooms can become soggy if stored for too long.
For the best bite, I would suggest enjoying these straight out of the air fryer. If you do happen to have a few leftovers to enjoy later, I would recommend eating them within a day or two.
