- Place ingredients in a blender jar in the order listed. Blend until you have a smooth batter.
- Heat a nonstick saucepan on medium-high heat. Spray with oil or butter.
- Place 2 tablespoons of batter at a time to make small, dollar pancakes.
- Cook each pancake until the top of the pancake has made small bubbles and the bubbles have disappeared.
- Using a spatula, gently loosen the pancake, and then flip over.
Can You Freeze these Keto Pancakes?
You know, I would not. I would also make them silver dollar size because I don't think they'll hold together quite as well if they're bigger. They're very delicate actually.
Kinda like a delicious cross between a crepe and a pancake. So the smaller size works out really well, and they're super tasty in those little bites.

- 1/2 cup (105 g) cottage cheese
- 1/3 cup (37.33 g) Superfine Almond Flour
- 1/4 cup (62.5 g) Unsweetened Almond Milk
- 2 tablespoons (2 tablespoons) Truvia
- Vanilla extract
- 1 teaspoon (1 teaspoon) Baking Powder
- Cooking Oil Spray
Instructions
- Place ingredients in a blender jar in the order listed. Blend until you have a smooth, liquid batter.
- Heat a nonstick saucepan on medium-high heat. Spray with oil or butter.
- Place 2 tablespoons of batter at a time to make small, dollar pancakes. This is a very liquid, delicate batter so do not try to make big pancakes with this one as they will not flip over as easily.
- Cook each pancake until the top of the pancake has made small bubbles and the bubbles have disappeared, about 1-2 minutes.
- Using a spatula, gently loosen the pancake, and then flip over.
- Make the rest of the pancakes in this manner and serve hot.

This is the one for me! I first put the cottage cheese in the food processor for about 20 seconds (I don't like the texture of cottage cheese) I then added the eggs and processed for a few seconds. I then added all the remaining ingredients (I didn't have almond milk so I used cashew milk instead). Makes very tasty, light Crêpes. Yum!!! This is a keeper!!!

I accidentally left out the almond milk and they were pretty great. I won't even try it with the almond milk now. Lol.

Ugh. I've been a chef for 17 years and these are ridiculous. Just got into the keto world and let me tell ya, these are impossible. I've tried many different cooking techniques with these and they are not fun. They stick to the pam like nobody's business. Extremely irritating. Will not make again. Flavor wise they are good but cooking is a challenge no one should endure.

Two stars because they weren’t the worst thing I’ve eaten. Two stars because it was ridiculous to make and I already had to reformulate it! Less almond mild first of all which is an oxymoron in California where every recipe needs more liquid. Difficult to flip “if bigger than a silver dollar”? Ridiculous to flip if they were the size of a quarter and near impossible to pour out a small amount! Sigh.

I'm sorry you didn't enjoy these pancakes as much as you had hoped. The humidity levels in our two different climates may have caused a bit of a hiccup. A good tip is to use a measuring cup or a large spoon to pour the batter instead of trying to pour directly out of the mixing bowl to control the size.

Hey guys! Just wanted to let you know that adding about 1/8th tsp of xanthan gum thickens up the batter and makes pouring easier!

I highly recommend using an egg circle until it is time to flip. This helps the runny batter stay contained and create a circle shape. Love love love these pancakes. I eat them plain because they are so sweet theres no need for syrup. Can definitely dial down the truvia
