yes you can definitely try stalks. It's easy to grow where I am in Texas, but I don't think it does well in colder climates.

I live in NY and the most successful thing we ever grew in our garden was lemongrass. It grew like a weed. It will it past through the winter but I harvested all the stalks and used my vacuum sealer to put them in bags and freeze them. I wish I had know. we could use the leaves for tea.
