What Makes Korean BBQ Different?
Korean BBQ, also known as "Gogigui" in Korean, is different from other styles of BBQ because of its unique marinades, seasonings, and cooking techniques.
Here are some key features that make Korean BBQ distinct:
- Marinades- Korean BBQ is typically marinated in a mixture of soy sauce, sugar, garlic, sesame oil, and other seasonings to add flavor and tenderize the meat.
- Cuts of meat- Korean BBQ features thinly sliced cuts of meat, such as bulgogi (marinated beef) or galbi (marinated short ribs), which are cooked quickly over high heat to preserve their tenderness.
- Tabletop grilling- Korean BBQ is often cooked on a tabletop grill, allowing diners to cook their own meat to their desired level of doneness.
- Sauce- Korean BBQ is typically served with a variety of dipping sauces, such as ssamjang (a mixture of chili paste, soybean paste, and other ingredients), to enhance the flavor of the meat and add a spicy kick.
What Is Korean BBQ Marinade Made Of?
The marinade (that also doubles as a sauce in this recipe) is very unique because of its incredibly flavorful ingredients that are the perfect blend of sweet, savory, spicy, and umami. The ingredients that form the marinade are included in the complete list of ingredients below:
Ingredients You'll Need To Get Started
- Chicken thighs
- Gochujang sauce
- Soy sauce
- Honey
- Sesame oil
- Rice vinegar
- Ginger
- Garlic
- Black pepper
- Vegetable oil
- Sesame seeds
How To Make Korean BBQ Chicken

First, combine the gochujang sauce, soy sauce, honey, sesame oil, rice vinegar, ginger paste, minced garlic, and black pepper. Mix well until everything is well combined.

Then, reserve 1/2 of the marinade to toss the chicken in after it is cooked.

Next, add the chicken pieces to one of the bowls of sauce and toss them until they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

Preheat your air fryer to 375F. Drizzle a tablespoon of vegetable oil over the chicken and toss to coat. Place the chicken in the air fryer basket in a single layer. Cook for 10-12 minutes, shaking the basket halfway through to ensure even cooking.

Finally, once the chicken is fully cooked, remove it from the air fryer, toss in the reserved sauce (that did not have the raw chicken in it), and transfer it to a serving dish. Garnish with sesame seeds and chopped green onions.
Variations
Korean BBQ chicken is a delicious and flavorful dish that can be enjoyed with a variety of different flavor swaps. Here are some of my favorite ways to switch up the marinade to create new flavors:
- Spicy Korean BBQ Chicken- Double the gochujang (Korean red pepper paste) in the marinade for a spicy kick.
- Pineapple Korean BBQ Chicken- Add some crushed pineapple to the marinade for a tropical twist.
- Korean BBQ Chicken Skewers- Thread marinated chicken onto skewers and grill for a fun and easy-to-eat variation.
What To Serve With It
Korean BBQ is often served with an array of side dishes, known as "banchan." Examples of these are:
- Kimchi
- Stir-Fried Veggies
- Pickled Vegetables
- Rice
It is also typically served with a variety of dipping sauces, such as ssamjang (a mixture of chili paste, soybean paste, and other ingredients), to enhance the flavor of the meat and add a spicy kick.
How Long Does It Last?
If the chicken was properly cooked and stored, it can last for up to 3-4 days in the refrigerator. However, it is important to note that the quality and texture of the chicken may start to deteriorate after the first day or two.
To ensure the longest possible storage time, it is recommended to store Korean BBQ chicken in an airtight container or wrap it tightly with plastic wrap or aluminum foil before placing it in the refrigerator.
Can You Freeze It?
Yes, Korean BBQ chicken can be frozen for later use. To freeze the chicken, place it in an airtight container or freezer bag and store it in the freezer for up to 2-3 months.
When you are ready to use the frozen Korean BBQ chicken, thaw it in the refrigerator overnight or use the defrost function on your microwave.
Once the chicken is thawed, you can reheat it in a pan or in your air fryer until heated through.
