What Is Za'atar?
It is incredibly difficult to find a za'atar that isn't a spice blend, so for this recipe, I used my favorite za'atar spice blend from Trader Joe's. It is a mixture of sesame seeds, thyme, rosemary, marjoram, coriander, oregano, and sea salt.
There are a few more ingredients that keep the spice blend from holding too much moisture, but they are all vegan-friendly as well.

- Canned Chickpeas
- Extra Virgin Olive Oil
- Salt
- Za'atar blend (my favorite is from Trader Joe's)
How To Make Air Fryer Chickpeas
- Open a can of chickpeas
- Drain excess liquid
- Rinse chickpeas thoroughly
- Pour rinsed chickpeas in a mixing bowl
- Drizzle with extra virgin olive oil
- Sprinkle with salt and za'atar blend
- Air fry at 400F for 18 minutes, tossing twice during the cooking cycle
- Remove from the air fryer and enjoy
Tips And Tricks
- Drizzle your chickpeas liberally with olive oil. Ensuring they are completely covered with the oil will get them perfectly crispy.
- Shake them often. For air fryer chickpeas that are cooked evenly, you will want to shake them often to keep them from sticking together and to allow all sides to be crisped by the air.
- Season before and after. Some of the salt and za'atar will shake off while cooking, so make sure to hit them with the spices one more time when they're fresh out of the air fryer for the biggest punch of flavor.
- Skip drying. If you're familiar with roasting chickpeas in your oven, you will want to dry them before drizzling with olive oil. With the air fryer, there's no need to dry first. The air fryer does all of the work.
