How To Make Chicken Bacon Ranch Casserole
If you're familiar with making casseroles, none of these steps will be new. I absolutely love a great casserole recipe for busy nights or days I just don't feel like cooking. Basically, all you need to do is mix the ingredients and bake them!
- In a large bowl, add all ingredients (reserving 1/2 cup cheddar cheese for finishing) and mix well.
- Pour the contents of the mixing bowl into a nonstick casserole dish.
- Cover the Chicken Bacon Casserole with the remaining cheddar cheese and bake.
- Remove from the oven, serve and enjoy!
Variations
I guarantee you won't be disappointed with this quick casserole dish, but if you want a variety of ways to mix it up and keep dinner exciting, here are a few variations you can try:
- Add more veggies. This casserole is already rich in vegetables with the addition of cauliflower and broccoli. If you're wanting to increase your fiber intake or make this Chicken Bacon Ranch Casserole stretch a little farther, you can add in precooked diced squash, onion, or even a variety of peppers for heat and texture. Unless your veggies are diced into extremely small pieces, they will have a tough time cooking through in the small amount of time this casserole takes to bake.
- PRO TIP- Buy the fresh or frozen steamer bags of your favorite low carb veggie blends. Microwave one or two of them and toss them into this chicken casserole for an easy shortcut.
- Skip the ranch. While ranch dressing is a condiment loved by most, it is a very intense flavor. If you're not a fan of ranch, try swapping out the ranch with some of my Keto Alfredo Sauce for a tasty low carb bite.
- Swap out the protein. Rotisserie chicken makes this chicken casserole simple and quick, but sometimes you don't have a leftover rotisserie chicken in your fridge. If this is the case, you can dice and saute chicken breasts or thighs until they reach an internal temperature of 165F, then cook the casserole as directed. You can also use leftover ground chicken or turkey for an equally delicious bite. The same goes for the bacon. If you don't have any of the precooked/microwavable bacon handy, you can air fry bacon and use it in the recipe as well.
What Is A Good Side For Chicken Casserole?
Who doesn't love a meal that has a little bit of everything you need all in one bite? With chicken casserole, you get protein, vegetables, dairy, and a whole lot of fiber in every bite.
However, if you're the kind of person that enjoys having several things to choose from on your table, here are a few sides that would pair well with this low carb casserole:
How Many Calories Are In Bacon Chicken Ranch Casserole?
This isn't one of the most low calorie recipes I've ever developed, but it is far from a splurge or a "cheat". With just over 500 calories per serving, you should easily be able to stay within your daily calorie limits and enjoy this dish.
How Long Does It Last?
Casseroles are notorious for feeding a crowd or providing leftovers to enjoy for meals to come. This Chicken Bacon Ranch Casserole is no exception.
For the best bite, store any leftovers you may have in an airtight container in your refrigerator for up to 4 days after it is prepared.
