What Is Are Almendrados?
The word "almendrados" actually means "almond paste", which is usually what these cookies are made with. They're delicious and easy little cookies that are a neat little treat to give as a gift or make for parties.
What Happens If You Use Almond Flour In Cookies?
Almendrados are a Spanish recipe that relies on almond flour to start with. Since almonds abound in most regions in Spain, and wheat is in short supply, many Spanish desserts use almond flour.
See? You thought almond flour was some kinda new fangled keto thing. Nope. Natural food. Traditional Recipe. The only thing I had to do was switch out the sugar.
Why You Have To Try These Almond Cookies

Are These Sugar Free Cookies?
These Almendrados Cookies, along with many of my other keto recipes, uses Swerve. If you're unfamiliar with this ingredient, it's a natural sweetener. It has no added ingredients such as preservatives, etc. so it's much better fo r you.
This sweetener is allowed if you're following keto parameters and won't throw you out of ketosis. I was elated when I first started using it because it made my keto cooking so much easier. It's definitely my favorite keto ingredient by far.
How To Make Almond Cookies
- In a medium bowl, beat egg. Add in almond flour, swerve and lemon and mix together to make a cohesive dough. Cover and refrigerate for 1-2 hours.
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- Pinching off pieces of dough about the size of a walnut, roll them into balls.
- Gently press an almond on top of each cookie. Arrange cookies one inch apart on baking sheet.
- Bake until cookies have barest hint of color but still remain soft, 18-20 minutes. Cool completely, and store in an airtight container.
Tips And Tricks For Making Almond Cookies
- I would not freeze these cookies. However, they will keep for a few days if stored in an airtight container.
- I use Swerve in this recipe, but other keto-friendly sweeteners can be used. Just note that the amounts used will differ. Read this article if you would like to learn more about Keto Friendly Sweeteners.
- You can use real sugar in place of the Swerve if you aren't low carb.

How Long Do They Last?
One of the many great things about these almond cookies is how long they last (that is, of course if you can keep your hands out of the cookie jar). If they are stored in an airtight container, you can expect these cookies to stay as great as the day you made them for up to 7 days at room temperature.
If you want to extend their life a little longer, you can store them in the refrigerator for a few more days.

What's the fat content of your almond flour? Is it defatted almond flour or is it super fine ground almonds? We get here almond flour with 10% fat content.
