What Kind Of Shrimp Should You Use?
Since this recipe is made easy in your Instant Pot, you will want to use frozen shrimp. If you use defrosted or fresh shrimp, it will likely overcook under pressure.
What Kind Of Pasta Should You Use?
For this recipe, I used a low carb pasta. I know that it isn't the cheapest or easiest to find option. So if you're cooking for family members that aren't eating low carb, feel free to use linguine or angel hair.
Just remember that for every cup of pasta, you need to add 2 cups of liquid so it cooks thoroughly.
This is also delicious served over shirataki noodles. You'll want to cook them separately if you go this route.
Low Carb Shrimp Scampi
I wanted to make something relatively high in protein and fat, low in carbs but also family friendly because I don't feel like making something else for a son who is selective about what he eats.
This Instant Pot Shrimp Scampi went together quickly and definitely doesn't need an Instant Pot, although that's how I made mine.
When we eat this Low Carb Shrimp Scampi, my husband and I will eat very little of the pasta, and lots of sauce and shrimp. My son can enjoy all the pasta he wants and everyone can be happy. Nutritionally, this packs quite a hefty protein punch, which means hopefully I'll stay full for longer.
Yes, you absolutely can. It's actually one of the easiest dinner solutions when you're eating low carb. It's super low in carbs and very filling.
Butter. Ok, it's more than just butter, but that's what makes it so delicious. You will also want to add garlic, red pepper flakes, paprika, and a little chicken broth. This sauce is totally customizable, though. You can add a variety of other seasonings to make this your perfect low carb meal.
Though most people will traditionally thicken this sauce with a little cornstarch or flour, this isn't a good low carb solution. I try to thicken my keto shrimp scampi with a little half and half or parmesan cheese.
How To Make This Instant Pot Shrimp Scampi Recipe
- Melt the butter in the Instant Pot or saucepan.
- Add in garlic and red pepper flakes and cook until the garlic is slightly browned 1-2 minutes.
- Add the paprika and then the frozen shrimp, salt, pepper, and noodles.
- Pour in the broth. If using broth, don't add salt above.
- Cook under pressure for 2 minutes and use quick release.
- Turn the pot to Saute, add in half and half and cheese, and stir until melted.

Bravo!!! I'd give this 5 stars except for the keto friendly pasta.... I mean I like it (my favorite brand and that which i used in this recipe is LC Foods..fettucine in this case) but let's keep it real. Regular old mega-carb pasta will always be the best. But of course, that is not why i made this recipe, now is it?
So with that, i will say hands down this will easily become part of my rotation. Partly because it is as quick and simple as the author says. I was a little skeptical that one cup of broth was not enough liquid for 2 cups of pasta, but it turned out just fine.
I did cook mine for an additional minute as i like my pasta more cooked than al dente (especially with low carb pasta) and it did not negatively affect the shrimp at all. It was nice and tender. I forgot to buy fresh garlic so i used dried minced garlic. It was fine...but the next time I will be sure to have fresh garlic as that cannot be beat. I happened to have roasted cherry tomatoes on hand that I had previously cooked in the air fryer (pro-tip... if your cherry tomatoes are starting to get that wrinkly look and you don't want to use them in a salad, they are perfect if you throw them in the air fryer with some olive oil and spices!)
I might also use a shade more butter and a shade less paprika...maybe add some lemon juice!
All in all, this is going to be one of my favorites! Worth the 5-7 minutes of your time to prepare! =)
