Keto Silver Dollar Pancakes

What Do You Eat For Breakfast On The Keto Diet?

Pancakes. They're a breakfast classic. You see them on just about every fast food breakfast menu you've ever looked at and for good reason. But sadly they are not low carb, even in the slightest.

So what if I told you that you can have your pancakes on a low carb diet and eat them without feeling guilty? With these Keto Silver Dollar Pancakes, you can do just that.

What Makes These Silver Dollar Pancakes So Amazing?

What Is A Good Keto Breakfast Besides Eggs?

Pancakes can be as much of a good keto breakfast as bacon and eggs. They're delightfully warm, fluffy, delicious and are great a la carte or paired with other keto breakfast favorites. But being as the main ingredient is typically flour in the traditional ones, they aren't the most practical breakfast option for someone on a low carb diet.

Enter these delightfully low carb Keto Silver Dollar Pancakes. They give you all the fluffy scrumptious-ness you've come to expect from a pancake without all those daunting carbs.

Aside from being a basic keto breakfast, they're easy to make as well. Who needs fast food low carb breakfast options when you can make these in no time!?

They're actually no more difficult to make than standard pancakes. Just mix all the ingredients for these keto pancakes together and pour them into a pan. Simple, painless, and oh so tasty.

What Are Keto Pancakes Made Of?

This keto pancake recipe is incredibly simple. You only need 7 ingredients to make them and they're so good you won't believe they're low carb.

To make quick keto breakfast, you'll need:

How To Make Keto Pancakes

  1. Place ingredients in a blender jar in the order listed. Blend until you have a smooth batter.
  2. Heat a nonstick saucepan on medium-high heat. Spray with oil or butter.
  3. Place 2 tablespoons of batter at a time to make small, dollar pancakes.
  4. Cook each pancake until the top of the pancake has made small bubbles and the bubbles have disappeared.
  5. Using a spatula, gently loosen the pancake, and then flip over.

Can You Freeze these Keto Pancakes?

You know, I would not. I would also make them silver dollar size because I don't think they'll hold together quite as well if they're bigger. They're very delicate actually.

Kinda like a delicious cross between a crepe and a pancake. So the smaller size works out really well, and they're super tasty in those little bites.

They may not be the big keto breakfast you were searching for on their own, you can always use that as an excuse to have more pancakes!

Keto breakfasts just got even easier.

How Long Do Low Carb Pancakes Last?

These pancakes are extremely delicate so they may not hold up to the test of saving for leftovers. However, if you store them in an air-tight container in single layers with a piece of parchment paper between them, they should stay just as tasty for up to 3 days in the refrigerator.

  • Place ingredients in a blender jar in the order listed. Blend until you have a smooth, liquid batter.
  • Heat a nonstick saucepan on medium-high heat. Spray with oil or butter.

These little pancakes are delicious! Besides the fact that they are fragile as it is pointed out in the blog, other than that I can't even tell the difference between them and non-keto Traditional pancakes!

This is the one for me! I first put the cottage cheese in the food processor for about 20 seconds (I don't like the texture of cottage cheese) I then added the eggs and processed for a few seconds. I then added all the remaining ingredients (I didn't have almond milk so I used cashew milk instead). Makes very tasty, light Crêpes. Yum!!! This is a keeper!!!

I accidentally left out the almond milk and they were pretty great. I won't even try it with the almond milk now. Lol.

Ugh. I've been a chef for 17 years and these are ridiculous. Just got into the keto world and let me tell ya, these are impossible. I've tried many different cooking techniques with these and they are not fun. They stick to the pam like nobody's business. Extremely irritating. Will not make again. Flavor wise they are good but cooking is a challenge no one should endure.

  4. I loved these pancakes! I tried the recipe with mozzarella cheese and it was awesome! Can't wait to explore. Thank you!

Two stars because they weren’t the worst thing I’ve eaten. Two stars because it was ridiculous to make and I already had to reformulate it! Less almond mild first of all which is an oxymoron in California where every recipe needs more liquid. Difficult to flip “if bigger than a silver dollar”? Ridiculous to flip if they were the size of a quarter and near impossible to pour out a small amount! Sigh.

    1. I'm sorry you didn't enjoy these pancakes as much as you had hoped. The humidity levels in our two different climates may have caused a bit of a hiccup. A good tip is to use a measuring cup or a large spoon to pour the batter instead of trying to pour directly out of the mixing bowl to control the size.

      1. Hey guys! Just wanted to let you know that adding about 1/8th tsp of xanthan gum thickens up the batter and makes pouring easier!
        It worked great for me!

I highly recommend using an egg circle until it is time to flip. This helps the runny batter stay contained and create a circle shape. Love love love these pancakes. I eat them plain because they are so sweet theres no need for syrup. Can definitely dial down the truvia
