Elana told me about this very simple but delicious recipe she makes. I don’t know why I don’t cook in a dutch oven more often. I tend to use either a crockpot or a Instant Pot rather than just the oven or stovetop. But this one looks simple enough even for me! (Of course, I still plan to try it in the Instant Pot some day…)
In a Dutch oven or heavy bottom pot, mix the beef cubes with onion, garlic, thyme, flour, salt, and pepper.
- Add tomato paste, beef broth, and beer. Bring to a boil. Cover and cook 1-2 hours on low.
- Remove the beef and bring the sauce to a boil. Simmer for 10-15 minutes til sauce gets thick. Then add meat back.
- Serve over mashed cauliflower.
