Tips And Tricks
With such a simple recipe, there aren't a lot of ways to make it easier, but there are a few different tricks to easily change the flavors without adding a lot of extra work.
- Pop the dip into a casserole dish and bake until melty for a hot corn dip that is great for dipping.
- Boil and cut fresh corn off of the cob to make this dip instead of using canned corn for a crisper bite.
- For added flavor, try adding in some chopped fresh cilantro or jalapeño peppers.
- You can substitute the diced tomatoes and green chilies with a can of Rotel tomatoes.
- If you are looking for a healthier option, try using light sour cream and mayonnaise.
Variations
Corn dip is a versatile dish that can be customized to suit your taste preferences. Here are a few variations to try:
- Add Bacon- Cook 4-6 slices of bacon until crispy, then crumble and stir into the corn dip mixture.
- Fiesta Style- Add 1/4 cup chopped cilantro, 1/4 cup chopped green onions, and 1/4 cup chopped red pepper to the corn dip mixture.
- Dial Up The Spice- Add 1-2 tablespoons of your favorite hot sauce or diced jalapeños to the corn dip mixture for an extra kick.
- Add Some Greek Flair- Add 1/2 cup of crumbled feta cheese and 1/4 cup of chopped kalamata olives to the corn dip mixture, then garnish with chopped parsley.
What To Serve With This Mexican Dip
- Tortilla Chips- Corn dip is traditionally served with tortilla chips, which provide a crunchy texture and a salty flavor that complements the sweetness of the dip.
- Vegetable Crudites- Raw vegetables, such as sliced bell peppers, celery, carrots, and cucumbers, are a healthy alternative to tortilla chips and provide a refreshing crunch.
- Pita Chips- Pita chips are a great alternative to tortilla chips and offer a different texture and flavor.
- Crackers- Serve the Mexican dip with a selection of crackers, such as wheat crackers, rice crackers, or water crackers, for a more substantial appetizer.
- Toasted Bread- Slices of toasted baguette or crusty bread are also a great option and provide a more substantial base for the elote dip.
- Quesadillas- Use it as a filling for quesadillas or as a topping for nachos.
- Grilled Meats- It can be served as a side dish to grilled meats, such as chicken, steak, or pork.
How Long Does It Last?
Corn dip can last for up to 3-4 days when stored properly in the refrigerator. To make it last as long as possible, it's important to keep it in an airtight container and refrigerate it quickly after serving.
Avoid leaving it out at room temperature for more than 2 hours, as this can promote bacterial growth and spoilage.
Can You Freeze It?
Corn dip is not an ideal candidate for freezing, as the texture and flavor can be affected when it is thawed.
The mayonnaise, cream cheese, and other dairy-based ingredients in the dip may separate or become watery when frozen and then thawed, which can result in an unappetizing texture.
