Back home after days and days on the road and happy to report my weight has been stable despite the travel and restaurant eating. I managed this by severely restricting carbs because I knew the calories would likely be higher than I wanted, what with restaurant food and all.
So made some soup this morning. Filling, nutritious, and low calorie.
I cut up carrots, celery, kale, mushrooms, green beans, cauliflower, green onions and garlic and mixed it with Swanson’s Thai Ginger infused broth. I put in about 4 ounce of chicken thighs and half a can of coconut milk, plus 1 tablespoon of Thai Green curry Paste, and simmered it all on low until the chicken fell apart.
Flavorful and filling. Mmm.
