How to Make These Keto Salted Caramel Pecan Pralines
- Lay out a sheet of parchment paper on a small baking tray.
- Heat butter, heavy whipping cream and Truvia in a small saucepan, over medium heat. Whisk occasionally to stir until the mixture comes to a boil. Once it starts to boil, whisk frequently until the mixture is foamy, thick, and a light tan. If you have digital thermometer, heat the mixture to about 280-290F.
- Add in pecans and stir. Working quickly, pour the mixture onto the prepared parchment paper pan and spread to about 1/4 inch thick all around.
- Cool. Allow the mixture to cool and break into 8 pieces.
How Long Does It Take For Pralines To Set?
Once you're done cooking this delicious Keto Salted Caramel Pecan Pralines on the stovetop, it should take about 20 minutes for them to fully crystalize and set. It can sometimes take longer, it just depends on how long they cooked for.
Are Praline Pecans The Same As Candied Pecans?
Though they have their similarities, pralines and candied pecans are not the same thing. Praline pecans are covered in a caramel coating whereas candied pecans are typically coated in a sugar and egg mixture.
Tips for Making the Perfect Keto Pralines
- The Truvia will crystallize a little in this recipe, but it is still very delicious, and quite close to a traditional praline recipe.
- You can choose to refrigerate them, but it will cause the crystals to become more noticeable, so you should instead eat them the same day you make them.
- These should not be frozen.

A first try, followed the recipe exactly, even cooked to the 280-290F temp. They look perfect, color is gorgeous, but they didn’t set up. They do taste amazing tho!! Stayed soft, even after over an hour on the counter. I’m putting them in the fridge to see what happens. I’ll try again - any suggestions?

I haven’t tried it that way but as long as you can get it to caramelize a little it should be ok?

I noticed salt was omitted in the instructions. I sprinkled it on just after pouring it in the pan, before it set. These were delicious!
