Unfortunately, no. I absolutely adore corn tortillas and how much flavor and texture they add to a dish--especially enchiladas. Unfortunately, they are made with corn flour and it is not keto-friendly.
If you're only monitoring your carbohydrate intake and not concerned about the ingredients being consumed, corn tortillas can be considered low carb if consumed in moderation. One corn tortilla has approximately 9 net carbs per serving.
How Many Net Carbs Are In Enchiladas?
Chicken Enchiladas aren't the most high carb dish you could choose if you weren't watching your carbohydrate intake, but they're far from keto-friendly. One traditional chicken enchilada packs around 25 net carbs.
Just one enchilada would put you above a daily goal of 20 carbs all in a few tasty bites. Instead of splurging on a few tasty bites made with the wrong ingredients, enjoy a larger portion made with a few low carb ingredients to stick to your dietary lifestyle choices.
Is Sour Cream Keto?
Yes! Not only is sour cream keto-friendly, it's actually extremely versatile and used in a many low carb dishes.
Since it is low in carbohydrates and high in fat, it helps to temper hunger while adding flavor and a creamy texture to many of your favorite foods.
As with any other keto-friendly food, it needs to be enjoyed sparingly. However, with a little over 1 gram of carbs per serving, it can still be easily incorporated into your favorite meals.

How To Make Keto Enchiladas
With the use of premade rotisserie chicken, making these keto chicken enchiladas is a breeze. Follow the simple directions below for perfect keto enchiladas every time!
- Mix together the rotisserie chicken, softened cream cheese, half of the green chilies, half of the Monterey jack cheese, and spices in a large bowl.
- Place the seasoned rotisserie chicken and cheese mixture in the center of the tortilla shells and roll to create a cylinder with holes on each end.

How Long Do They Last?
Keto Enchiladas are great for feeding a family because they're both filling and delicious. unfortunately, if you're only feeding one or two people, you may have leftovers. If this applies to you, you may consider halving the recipe.
While these Chicken Enchiladas with White Sauce are still incredibly delicious when reheated the next day, the longer the tortillas sit in the sauce, the soggier they become.
When stored in an airtight container in the refrigerator you can expect these low carb enchiladas to last up to 3 days.
Can You Freeze Them?
To freeze them successfully, assemble the enchiladas as usual, but hold off on adding the sauce directly over top. Excess moisture can cause the low carb tortillas to soften too much after thawing.
Wrap the dish tightly in plastic wrap followed by aluminum foil, or freeze individual portions for easy reheating later.
