How To Make Coffee Cake Muffins
- Preheat your oven to 350°F and line a muffin tin with paper liners.
- In a large mixing bowl, combine the flour, sugar, brown sugar, baking powder, baking soda, cinnamon and salt. Mix well.
- In a separate bowl, combine the melted butter, eggs, milk, and vanilla extract. Mix until well combined.
- Slowly add the wet ingredients to the dry ingredients, stirring until just combined. Slowly fold in the chocolate chips. Be careful not to overmix.
- To make the streusel topping, combine the flour, brown sugar, butter, and cinnamon (if using) in a small mixing bowl. Use your fingers or a fork to mix until the mixture resembles coarse crumbs.
- Fill the muffin cups about 2/3 full with the batter. Sprinkle the streusel topping evenly over the muffins.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool for 5-10 minutes before removing them from the muffin tin.
Variations
- Swap out the filler. If you're more of a fan of fruity muffins for breakfast, swap out the chocolate chips for blueberries for a bright and sweet bite.
- Leave out the chocolate chips. For a classic coffee cake muffin, simply leave out the chocolate chips for a more traditional bite.
- Double the recipe. These coffee cake muffins reheat like a dream, so while you have the oven on, make extras to freeze for later.
What To Serve With Them
Coffee cake muffins pair well with a variety of different drinks and side dishes, depending on the time of day and the occasion.
Here are some of my favorite things to pair these tasty treats with:
- Coffee- As the name suggests, coffee is the traditional pairing for coffee cake muffins. The warm, rich flavor of coffee complements the sweet, moist muffins perfectly.
- Tea- If you're not a coffee drinker, tea is another great option to serve with coffee cake muffins. The subtle flavors of tea can highlight the flavors in the muffins.
- Milk- For a classic pairing, serve the muffins with a cold glass of milk. The creamy, smooth texture of the milk complements the texture of the muffins.
- Juice-For a refreshing option, serve the muffins with a glass of juice such as orange juice, cranberry juice or apple juice. The acidity of the juice can help to cut through the sweetness of the muffins.
- Yogurt- If you're looking for a more substantial side dish, consider serving the muffins with a bowl of yogurt. The tanginess of the yogurt can balance out the sweetness of the muffins.
How To Store And Freeze For Later
Coffee cake muffins will last for about 3-4 days when stored in an airtight container at room temperature. They can also be frozen for up to 3 months. To thaw, place them in the refrigerator overnight or at room temperature for a few hours before serving.
