Do you like Andes Mints? If you like that creamy mint mixed with rich chocolate, you're going to love these Keto Mint Brownies. The creamy mint frosting is good enough to eat with a spoon, and the dark chocolate of the brownie makes for an awesome combination.
How Many Mint Brownies Does This Make?
It will make 12 good-sized brownies. The recipe makes an 8x6 size pan of them, so it would be perfect for a family dessert, or as a dish to bring with you to a potluck or dinner get together.

Is The Frosting Naturally Green?
Unfortunately, no. I used green food coloring to make the frosting a pretty minty green color. If you don't care what color the frosting is, you can omit that step.

- Powdered Swerve
- Heavy Whipping Cream
- Peppermint extract
- Green food coloring
How To Make Keto Brownies?
- Lightly grease 8 x 6-inch square pan with shortening or cooking spray.
- Place butter and chocolate in a large microwave-safe bowl. Heat for 15-20 seconds in the microwave and stir well until the butter and chocolate are melted. Add in almond flour and mix well. Pat this mixture into the greased pan and set it in the refrigerator.
- In a small bowl, beat 1/4 cup butter, whipping cream, peppermint extract, and food color with electric mixer on medium speed until well mixed. On low speed, gradually beat in powdered Swerve until smooth.
- Spread peppermint mixture evenly over chocolate mixture. Refrigerate for 15-20 minutes For bars, cut into 5 rows by 5 rows.

- Green food coloring in the frosting is optional.
- Be careful not to over-microwave the chocolate, or it will start to harden and will ruin the recipe. The best practice is to stir to allow the melted butter to melt the chocolate the rest of the way.

Not sure what happened... icing seemed to get less smooth the more I mixed it. Finally the ingredients seemed to separate into grainy-textured butter and a runny green liquid. Urvashi, please help! Thank you!

I had been wondering about the whole "use an electric mixer" on the heavy cream part, but gave her the benefit of the doubt. However, when I tried making the recipe my concerns were realized. Using heavy cream with an electric mixer will cause the fat to separate from the water leaving you with green water and little globules of butter and sweetener. You absolutely must mix this by hand - and gently!

GOOD NEWS!
If you've arrived here because you already made sweet mint butter soup, simply stick the whole mess back into the microwave for 20 to 30 seconds and then hand whisk it into shape! That will melt the solids allowing them to remix with the water. Then just pour onto your brownie mix before it sets up. Whew...saved!

The recipe says Equipment needed 8x8 pan. The recipe itself says 8x6 square pan. 8x6 is a rectangle, not a square. So is it 8x8 or 8x6?
