Equipment You'll Need
Grab These Ingredients Before You Get Started
- Egg Roll Wrappers. These should be in the refrigerated produce section of your local grocery store.
- Bacon. You can buy the precooked variety or fry up a few strips of uncooked bacon.
- Eggs. Scrambled work best for this recipe.
- Cheese. I prefer cheddar for a sharp bite, but Colby jack and pepper jack are just as tasty.
- Hashbrowns (optional). This takes the place of cabbage in a traditional eggroll and provides a filling ingredient to make these breakfast eggrolls a full meal.
- Oil. Vegetable oil or canola oil works best for adding to an oil sprayer without clogging.

How To Roll Egg Rolls
If you've never made an eggroll at home before, it can seem quite intimidating just looking at one.
But if you've ever rolled a burrito, this will be a breeze for you. Keep your ingredients close, and your fingers lose. You shouldn't have any trouble at all.
Here's how to roll a perfect homemade eggroll:
- Take one egg roll wrapper and lay flat with one corner pointed toward your belly button.
- Place desired ingredients into the center of the egg roll wrapper in a straight line. It should be approximately 1 inch wide with a span the length of the egg roll wrapper diagonally, leaving 1/2 an inch without filling on each end.
- Fold in the two corners of the egg roll far enough that the fold touches the end of the filling.
- Next, start on the opposite side of the egg roll wrapper and fold over the two tucked-in corners and the egg roll filling.
- Continue to roll the eggroll tightly (but not too tight) until it is rolled into a cylinder.
- Use a basting brush or the tip of your finger to brush water on the edge of the eggroll to seal it.

Tips And Tricks
- Don't forget the oil. Eggroll and wonton wrappers need a little extra oil to get that bubbly finish you're used to. Don't skip this step, or they won't have the airy and crispy bite you're used to.
- Use your favorite ingredients. Vegetarian? Like sausage? Lactose Intolerant? No problem. Just fill these eggrolls with your breakfast favorites and cook as instructed.
- Seal the seams. If the ends aren't sealed, the fillings will spill out while cooking.
- Dip and dip some more. As a sauce lover, everything I eat is just a vessel for a tasty dip.
How Long Do They Last?
Ideally, you would consume these air fryer egg rolls within 3-4 days of making them. The longer they sit in your refrigerator, the more moisture the eggroll wrappers absorb, and the less crispy they are when you reheat them.
If you're not picky about texture, you can safely keep these breakfast eggrolls for up to a week in an air-tight container in your refrigerator.
