Why Should I Make Instant Pot Corned Beef and Cabbage?
There are at least two huge advantages to making Instant Pot corned beef rather than doing it on the stovetop.
First, of course, is the time. It takes about 90 minutes to cook up tender, and delicious.
And guess what?
You don't have to babysit it. I don't know about you, but I can find a LOT of great ways to spend 90 minutes--almost NONE of which involve watching over corned beef!
Why Does This Instant Pot Corned Beef And Cabbage Recipe Have Two Steps?
Now the one thing to note is that you must do this recipe in two steps. Pressure cooker corned beef takes 90 minutes. Pressure cooker cabbage takes less than 5 minutes.
Do not try to do it all in one g.! Don't trust any recipe that tells you that you can make pressure cooker corned beef and cabbage in one step.
If you try to cook everything all at once, your veggies will turn to absolute mush and the whole meal will be inedible.
How Do You Cook Corned Beef and Cabbage In The Instant Pot?
Here are the steps you'll need to make this Instant Pot recipe:
- Add corned beef to the Instant Pot with 1 cup of water.
- Cook on high pressure for 80-90 minutes and release pressure naturally for 10 minutes, and then release remaining pressure.
- Add cabbage, potatoes, and carrots, and shut the lid. Cook for 4 minutes on high pressure with a quick release.
Do You Rinse Corned Beef Before Cooking?
Whether or not to rinse your corned beef before cooking is completely up to your personal preference. If you want a more mellow tasting and less salty Instant Pot Corned Beef, go ahead and rinse it before you cook.
I don't rinse when I make this recipe. I feel like the water added to the Instant Pot to help it come to pressure does a good enough job of diluting the salt.
How Can I Make This Keto?
A lot of my readers are like me, and try to maintain a Keto lifestyle year round. Making this Corned beef recipe Keto is simple. Remove the potatoes and carrots. Reduce cook time to 2 minutes for soft cabbage, or just shut the lid and let the residual heat cook the cabbage for firm cabbage.

I made this yesterday. I'm not a great fan if corned beef but its a seasonal thing my husband enjoys.
This was the best corned beef & cabbage I've ever had and so easy. I'll make it again.
We compromised on carbs. I added cabbage, carrots & Onion but no potato and we both enjoyed it very much.

Made this for dinner tonight! So so good! I reduced the time on the veggies to two minutes and they were perfectly soft but not mushy. Yum!

Do I need to rinse the meat after removing it from the package? What about the spice package? Thank you.

Yes do rinse it but open up the spice packet and put it into the pot with the beef. Most delicious

No need to rinse the brining liquid. I’ve made it 3 times now, different brands. The package instructions say to include the liquid - optional - as its already flavored. Same with the spice packet.
If you include the liquid, count it toward the total or not by choice.

Looking forward to making this. Any thoughts, reasons to use (or not) the trivet to raise the meat off the bottom? Or just doesn't matter. Also does 15% increase in time for altitude (5K') sound right? 90 + 13/14.

I am not the best person to consult on altitude. I can give you theory, not experience on it 🙂 I prefer to leave the meat in the pot so that it braises in the liquid. I find it to be more moist that way.

First time was super delish. But it did stick a bit to the bottom of the pot. FLAT cut seemed to be oddly shaped.
Just made again using a 2-lb POINT cut, on trivet, with beer for liquid. Fattier, and still very moist. This cut seems longer, but better consistency for thickness and slicing.

Came out a little dry. Next time I'll adjust the time back by 10 minutes to check it. Saw where you had this listed under American cuisine, in which it isn't. It's an Irish cuisine, by far.

Actually, it’s an American tradition to eat corned beef on St. Patrick’s day, not Irish (most of our St. Paddy’s Day traditions have little to nothing to do with authentic Irish culture!). For more authentic and iconic Irish fare, try Bangers & Mash (sausages with mashed root vegetables, like potatoes), colcannon, soda bread, bubble & squeak, etc.
