Instructions
Preheat the Oven
. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
Cut the Puff Pastry
. Roll out both pastry sheets on a lightly floured surface. Cut each sheet into 6 equal rectangles, for a total of 12.
Add the Filling
. Spoon about 1 tablespoon of jam or preserves onto the center of 6 rectangles. Leave a small border around the edges.
Seal and Crimp
. Brush the edges with beaten egg. Top each with another rectangle of pastry. Press the edges to seal, then crimp with a fork.
Brush and Bake
. Place on the baking sheet and brush tops with the remaining egg wash. Bake for 15–18 minutes, or until golden brown and puffed.
Make the Icing
. While pastries cool slightly, whisk together powdered sugar, milk, and vanilla extract until smooth.
Drizzle and Serve
. Drizzle icing over warm strudels and serve immediately, or let them cool and store for later!
