These sweet air fryer apple pie taquitos give you all the cozy flavor of homemade apple pie in a quick, handheld dessert that is perfect for fall, holidays, weeknight treats, or anytime you want something warm and comforting without making a full pie.
Peel and core the apples, then slice them into small pieces.
Melt butter in a skillet over medium heat. Add the sliced apples, brown sugar, cinnamon, and nutmeg. Cook for 5 to 7 minutes, stirring occasionally, until the apples begin to soften. Stir in the vanilla. Whisk the cornstarch and water together in a small bowl, then pour the slurry into the skillet. Cook for another 1 to 2 minutes, stirring, until the filling thickens. Remove from the heat and allow it to cool slightly.
In a bowl, stir together the granulated sugar and cinnamon. Set it aside while you assemble the taquitos.
