Prep Ingredients. Slice the chicken into strips and chop the bell peppers and onion.
Cook Chicken. In a large skillet, heat the olive oil over medium heat. Add the chicken strips and season with salt and pepper. Sauté for 4-6 minutes until the chicken is golden and cooked through.
Sauté Vegetables. Remove the chicken and add onions and bell peppers to the skillet. Cook until they are soft and slightly caramelized.
Combine and Season. Return the chicken to the skillet. Add garlic, paprika, and oregano. Stir well to combine and cook for an additional 2-3 minutes.
Garnish and Serve. Sprinkle with fresh parsley before serving. Serve hot, ideal over rice or with crusty bread.
