Sauté the Vegetables. In a pan, heat a small amount of olive oil and sauté the garlic and ginger until fragrant. Add the shredded cabbage, carrots, and bean sprouts. Cook until tender. Add soy sauce and mix well.
Add the Protein (Optional). If using protein, cook it separately and mix it with the vegetable filling.
Prepare the Wrappers. Place a spring roll wrapper on a flat surface, and keep a small bowl of water nearby to seal the edges.

Cook. Place the spring rolls in a single layer in the air fryer basket. Cook for 8-10 minutes, flipping halfway through, until golden and crispy.
Combine Ingredients. In a small bowl, mix soy sauce, rice vinegar, sesame oil, chili flakes, and honey until well combined.
Serve Hot. Serve your air fryer spring rolls hot with the prepared dipping sauce. They make a perfect appetizer or snack.
