Prep the Potatoes. Peel and chop 2 lbs of potatoes into roughly equal-sized chunks. Smaller, uniform pieces cook faster and more evenly.
Boil to Perfection. Place the potato chunks in a large pot and cover with cold water. Add 1 teaspoon of salt and bring to a boil. Cook for 15–20 minutes or until the potatoes are fork-tender.
Drain & Mash. Drain the cooked potatoes and return them to the warm pot. Add butter, sour cream, and garlic powder (if using). Mash using a potato masher or hand mixer, until you reach your desired consistency.
