For The Peach Filling

Instructions
In a large bowl, combine the flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Cut in the butter until the mixture forms coarse crumbs.
Take 2/3 of the crumble mixture and press it firmly into the bottom of the prepared 8x8 pan. This becomes the base of the bars.
Take a portion of the crumble mixture and press it firmly into the bottom of the prepared pan. This becomes the base of the bars.
Spread the peach filling evenly over the crust.
Sprinkle the remaining crumble mixture over the peaches, making sure the fruit is mostly covered.
Bake at 350F for 40-45 minutes, or until the top is golden brown and the peach filling is bubbling slightly around the edges.
Let the bars cool completely before slicing so the filling has time to set and the bars hold together better.
