Marinate the Chicken. In a large bowl, combine olive oil, lemon juice and zest, minced garlic, herbs, paprika, salt, and pepper. Add the chicken thighs, making sure they are well-coated. Let marinate for at least 15 minutes, or up to an hour in the refrigerator.
Cook the Chicken. Heat a large skillet over medium-high heat. Add the chicken thighs skin-side down, and cook until the skin is crispy and golden, about 7-8 minutes. Flip the chicken and cook on the other side until the internal temperature reaches 165°F, about another 7 minutes.
Serve. Transfer the chicken to a serving platter. Optionally, garnish with extra lemon wedges and a sprinkle of fresh chopped herbs for added freshness and presentation.
