Marinate the Chicken. In a large bowl, whisk together honey, lime juice, minced garlic, soy sauce, olive oil, cumin, paprika, salt, and black pepper. Add the chicken thighs and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 8 hours for maximum flavor.
Cook the Chicken. Heat a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off, and add to the skillet. Sear each side for 2 minutes to lock in flavor. Transfer the skillet of chicken thighs to the oven and bake at 375F for 45-50 minutes or until the chicken is cooked through. The internal temperature should reach 165°F.
Serve. Transfer the chicken to a serving plate. Garnish with fresh cilantro and lime wedges. Serve hot with your favorite sides.
