Marinate the Pork. In a bowl, combine olive oil, minced garlic, soy sauce, honey, lemon juice, salt, and pepper. Whisk together until well combined. Place the pork tenderloin in a resealable plastic bag or a shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2-4 hours for maximum flavor.
Preheat the Grill. Preheat your grill to medium-high heat (around 375-400°F). This ensures the pork will cook evenly and develop a nice char on the outside.
Grill the Pork. Remove the pork from the marinade, allowing any excess to drip off. Place the tenderloin on the preheated grill. Grill the pork for 15-20 minutes, turning occasionally, until it reaches an internal temperature of 145°F. The pork should be slightly pink in the center for optimal juiciness.
Rest and Slice. Once cooked, transfer the pork to a cutting board and let it rest for 5-10 minutes. This allows the juices to redistribute throughout the meat. Slice the pork into medallions and serve immediately.
