Prepare the Blueberry Filling. In a large bowl, toss the fresh or thawed blueberries with sugar, a squeeze of lemon juice, and a pinch of salt. Pour the mixture into a greased baking dish, making sure to spread it evenly across the bottom.
Make the Biscuit Topping. In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Stir in the milk until just combined to form a dough.
Assemble the Cobbler. Drop spoonfuls of the biscuit dough over the blueberry mixture. The dough doesn’t need to cover the entire surface. The blueberries should peek through the gaps.
Bake. Bake in a preheated oven at 375°F for 35-40 minutes, or until the topping is golden brown and the blueberry filling is bubbling around the edges.
Serve. Let the cobbler cool for a few minutes before serving. It’s delicious on its own, but even better with a scoop of vanilla ice cream or a dollop of whipped cream.
