Instructions
Preheat the Oven
. Preheat your oven to 350°F. Line a muffin tin with paper liners or grease with non-stick spray.
Mash the Bananas
. In a large bowl, mash the overripe bananas until smooth.
Mix Wet Ingredients
. Add the eggs, milk, and vanilla extract to the mashed bananas. Stir until well combined.
Combine Dry Ingredients
. In a separate bowl, whisk together the oats, flour, sugar, baking powder, cinnamon, and salt.
Mix Together
. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
