Start by seasoning your pork chops with salt and pepper on both sides. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the pork chops and sear them for about 3-4 minutes per side until they’re golden brown. Remove the pork chops from the skillet and set aside.
In the same skillet, add the butter and sauté the diced onion and minced garlic for about 2 minutes until softened. Add the sliced apples and sauté for another 3-4 minutes until the apples are tender but still hold their shape.
Pour in the chicken broth, then stir in the brown sugar, cinnamon, and thyme. Let the mixture simmer for about 2-3 minutes, scraping the bottom of the skillet to release any browned bits from the pork chops.
Return the pork chops to the skillet, spooning the apple mixture over the top. Lower the heat to medium and cover the skillet. Let everything simmer for about 5-7 minutes, until the pork is cooked through and tender, and the apples are fully caramelized.
Once the pork chops are cooked, remove them from the skillet and place them on a serving platter. Spoon the apple mixture and pan sauce over the pork chops, and garnish with extra thyme.
