Add the softened cream cheese, chopped spinach, mozzarella, Parmesan, minced garlic, and Italian seasoning to a medium bowl. Stir until everything is evenly combined.
Pat the chicken breasts dry with paper towels. Using a sharp knife, cut a deep horizontal pocket into the side of each chicken breast.
Divide the cream cheese mixture evenly among the chicken breasts. Spoon the filling into each pocket and gently press the chicken closed around it.
