Place 1.5 cups of water into your Instant Pot. Cut the beets in half and place on a steamer basket or on a trivet.
Close the lid and cook on high pressure for 12 minutes. When cook time is complete, let pot release pressure naturally for 10 minutes, and then release all remaining pressure.
Allow the cooked beets to cool before trying to peel, but once they’re cool the peel will just slide off.
Stovetop Steaming
Place two cups of water in a large pan. Place a silicone steamer basket or steamer rack into the pan. Ensure the water is below the basket.
Scrub the beets well. Cut the beets in half for faster steaming, and place them on the rack. Partially cover the pot with a lid, leaving it slightly off the pot to allow steam to escape.
Steam for about 30 minutes until the beets are tender. Whole beets will take closer to 45-50 minutes to cook fully. Use a paper towel to peel them after cooling.
Stovetop Boiling
Scrub the beets and place them into a saucepan. Cover with water, allowing the water to cover the beets fully, ensuring an additional 2 inches of water above the beets. Partially cover with a lid, leaving it slightly off the pot to allow steam to escape.
Boil for about 20-25 minutes until the beets are tender. Whole beets will take closer to 34-45 minutes to cook fully.
Drain the water and allow the beets to cool. Use a paper towel to peel them after cooling.
