How to Make Thai Green Curry Mussels

1. Heat a sauté pan. Add coconut oil and green curry paste and sauté for 1 minute. 2. Add ginger, garlic, tomatoes, eggplant and mix well. 3. Pour in coconut milk, soy sauce, fish sauce, and Swerve. Cover with a lid and cook for 10 minutes.
