4. Using a coarse grater, grate the beets and carrots and set aside.  5. When the pot is done cooking, allow it to sit undisturbed for 10 minutes. 5. Add additional water, vegetables, and vinegar. 6. Seal the pot and cook for 1 minute and high pressure.
