This Low Carb Sausage Kale Soup is loaded with protein and flavor and is one of my favorite things to make. It's sort of like having the best part of a spaghetti sauce but in a soup.

What You'll Need

– Italian Sausage – Onions – Garlic Cloves – Kale – Tomatoes – Water – Basil – Kosher Salt – Ground Black Pepper – Tomato Paste – Heavy Whipping Cream

How To Make Low Carb Soup

1. Put olive oil in the pot. Add garlic, onions, and stir. 2. Add the sausage and break up any large pieces.  3. Add kale, tomatoes, water, basil, salt and pepper. Stir, close the lid. 4. Cook for 5 mins on high. Allow it to release pressure naturally for 10 mins. 5. Add tomato paste and heavy whipping cream or coconut milk and stir to incorporate. Garnish with fresh basil and serve.
