Prepare the Dough

In a mixing bowl, combine masa harina, salt, and warm water. Knead until the dough is soft but not sticky. If it’s too dry, add more water 1 tablespoon at a time. Let it rest for 5 minutes to fully hydrate.

Shape the Gorditas

Divide the dough into 6-8 equal portions and roll them into balls. Flatten each ball into a 3-4 inch disc, about ½ inch thick.

Cook the Gorditas

Heat a cast iron skillet or griddle over medium heat. Lightly oil the surface and cook the gorditas for 2-3 minutes per side until they develop golden brown spots.
