Start by peeling and chopping your apples into small, bite-sized pieces. In a skillet, melt butter over medium heat. Add the chopped apples, cinnamon, and brown sugar. Cook until the apples are soft and caramelized—about 5-7 minutes. Set the apple mixture aside.

Make the Pancake Batter

In a large mixing bowl, whisk together the flour, baking powder, sugar, and cinnamon. In another bowl, combine the milk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this will make your pancakes tough.
