Omit cinnamon add ½ teaspoon almond extract, and 6-8 berries of choice.
Instructions
In a coffee mug, beat together egg, heavy whipping cream and almond extract. Add in this order: almond flour, Swerve, cinnamon, and baking powder, and mix well. Alternatively, you can combine the dry ingredients in a small bowl and add to the egg and cream mixture. Stir well ensuring you have no lumps.
Microwave for 1 minute until the cake has pulled away from the sides, and the top is set but still moist.
NOTES
Gently pushing down the cake batter helps get an even rise and a better looking mug cake.
Cleaning around the top of the cup after you have mixed and before you cook also helps a lot.
This recipe works well with any sized mug, but if you want it to rise to the top of the mug then you need one that holds around 1 cup of liquid.
If you are making the berry mug cake it is easier to mix in a second bowl and transfer to the mug, the three other variants all mix easily in a mug.
