Add onion, garlic, Italian seasoning, tomatoes, tomato paste, water and salt into the Instant Pot and stir.
Add in tortellini and kale and close the lid.
Cook at HIGH Pressure for 3 minutes. Allow pressure to release naturally for 5 minutes and then carefully release all remaining pressure.
Stir in chopped basil and parmesan cheese immediately before serving.
Tips and Tricks for Making Spinach Tortellini Soup
You can sub the spinach out for kale if you'd prefer.
You can also use a different filled pasta rather than the tortellini.
To make this stovetop, cook the soup without the pasta. Once the kale is cooked, add in the pasta and cook for the time specified for that particular pasta. You may need to add additional water to the soup.
