In a large bowl, beat softened butter, cream cheese, and cream with an electric mixer on medium speed for 2 to 3 minutes, scraping the bowl occasionally, until smooth and creamy.
Stir in vanilla, then stir in powdered Swerve. Add more Swerve as needed until frosting is a thick, spreadable consistency.
NOTE: Make sure that you are using POWDERED Swerve and not the granular kind. Otherwise, the frosting will turn out really gritty.
Peanut Butter Cream Cheese Frosting: Reduce cream cheese to 4 ounces and add 1/4 cup peanut butter.Chocolate Cream Cheese Frosting: Add 1/4 cup unsweetened cocoa and increase heavy cream to 1/4 cup, adding a little at a time until the frosting reaches a spreadable consistency.Amaretto Icing: Omit Vanilla extract, add 2-3 Tablespoons of Amaretto, or add 1 teaspoon of Almond Extract.Lemon Icing: Add 1 teaspoon lemon extract and 2 teaspoons fresh lemon zest.Coffee Icing: Add 1 tablespoon of Instant Espresso.
