Place almond milk, heavy whipping cream, Truvia and chocolate squares in a saucepan and heat on medium-low heat. Stir frequently and do not allow the mixture to come to a rolling boil.
Once the chocolate is melted and the mixture is heated through, remove from heat and stir in cinnamon, cayenne pepper and vanilla extract. Pour into demitasse cups to serve.
This is a very rich, sipping chocolate, not a hot chocolate to guzzle down.
Store the sipping chocolate in the fridge for up to a week. Mix about 1-2 tablespoons of the chocolate with 8 oz of hot almond milk and enjoy as a drinking chocolate.
